Usually after a week I change the status to "payment not complete" using the "change status" button.

After 14 days I change the status to "canceled".

Hereby I choose the option that the buyer no longer responds to the mails and that the item or items that have been ordered will automatically be placed back in the store.

Of course this is personal and you can decide for yourself.
